I Blamed Myself for 20 Years. Turns Out It Was Never About Willpower.

One chocolate bar. Thirty seconds. And my brain was already hunting for the next one.

Not hunger. I’d already eaten. But something had switched on, and I was moving through the kitchen before I’d registered what I was doing.

I’ve watched that exact pattern play out enough times now to have logged it properly. One UPF event. Three to four days of elevated food noise. And then, usually around day seven, it happens again. That’s two years of tracked data saying the same thing. I’m 52, I’ve lost four and a half stone, I reversed pre-diabetes without medication, and I have been a person who could not moderate certain foods my entire adult life. I am not a person without willpower. So something else was going on.

This is what I eventually worked out.


For 20 Years I Called It Weakness

Boxing Day 2023. Eighteen stone. Five medications. I couldn’t walk upstairs without stopping halfway to catch my breath.

I looked in the mirror and said, out loud, to nobody: “This ends now.”

Not Monday. Not January. That day.

What I thought I was fixing was willpower. The plan was straightforward enough: fast, cut the junk, get the blood tests done, stick to it. And I did. For the first time in my adult life, I actually did.

Fourteen months later: 13 stone 7. Off every medication. HbA1c down from 46 (pre-diabetic) to 37 (normal). No statins, no allopurinol for the gout, no asthma inhalers. My GP was using words I’d never heard him use in twenty years of consultations.

So I thought I’d cracked it. I thought I’d finally found enough willpower.

What I hadn’t worked out yet was what was actually driving the other side of the pattern.


The Data That Changed My Mind

December 3rd, 2025. Day 52 of my 70-Day Rhythm Reset (WMTWL-MOM-310). I’d been clean for about a week: no UPF, no sugar to speak of, eating window solid.

One chocolate bar.

Within thirty seconds I was in the kitchen looking for more. Not because I was hungry. Something had been switched on. I noticed every moment of it happening, which is new. Two years ago that would just have been a Tuesday. By the end of that day I’d had the chocolate, a YOP, crisps, more crackers. Over 1,600 calories from things I hadn’t planned and didn’t particularly want.

The pattern tracked consistently from there. Day two: cravings still loud. Day three: starting to quiet. Day five: I sometimes think I’ve reset. Day seven: walking into some social situation and doing it again.

Every. Single. Time.

And the data gets more specific than that. A meringue with fruit and double cream at a friend’s dinner: I genuinely enjoyed it, the next-day penalty was minimal, GKI held reasonably steady. A chocolate muffin from a coffee shop: similar calories, completely different aftermath. Three days of food noise. GKI jumping to 43. Ketones near zero. I could feel the difference before I’d even looked at the numbers.

That’s not willpower failing differently on different days. That’s two chemically distinct inputs producing two chemically distinct responses.


What Was Actually Happening (It Wasn’t Me)

I started drinking Coca-Cola at age five. Prescribed by a doctor, apparently. Six litres a day at peak, in my teens (WMTWL-MOM-271). By the time I stopped, the wiring was decades old. Stopped Coke. Found sweets. Stopped sweets for a bit. Found biscuits. Found crisps. The substance changed. The pattern didn’t.

Here’s what Tim Spector, the epidemiologist behind the ZOE study, found when he looked at this at population level (EXP 1267): ultra-processed foods were engineered using sugar, fat, and salt. Not primarily for flavour. Because each one inhibits bacterial and fungal growth and extends shelf life. The obesity epidemic, he argues, is a direct consequence of the industrial food preservation problem.

Read that again. Not a personal willpower failure. An industrial food preservation problem.

And here’s what happens in the brain when those three ingredients hit in the right ratios, the so-called bliss point: your fullness signals get overridden. Not weakened. Overridden (EXP 801). The brain gets a dopamine signal before the gut has had time to report that you’ve eaten enough. And then it wants to do it again.

Think of it like a slot machine that’s been fed one coin. The brain isn’t looking for satisfaction at that point. It’s looking for the next pull. One chocolate bar isn’t a door into enjoyment. It’s a lever that starts a loop the lever was engineered to start.

That’s what I’ve been watching in my own data for two years. And once you see the mechanism clearly, it stops feeling like failure. It starts feeling like physiology.


Why the Meringue Behaves Differently

The fat from the cream and the fibre from the fruit disrupt the bliss point formula. The glucose hit slows down. The brain gets an actual fullness signal rather than a dopamine override. Real satisfaction rather than the loop starting again.

A chocolate muffin: refined flour, sugar, refined fat. Hits fast. Fullness signals don’t keep up. The slot machine fires.

This is not a moral distinction. The meringue isn’t virtuous and the muffin isn’t wicked. They’re just two different chemical inputs producing two different hormonal responses. One resets. One loops. I know which one is worth a 10% Rule choice for me. And I know which one I’m eating for the signal rather than the enjoyment, half the time without even noticing until afterwards.

That distinction has taken me twenty years to make.


What I’d Do Differently (And What to Watch For)

The goal was never moderation. It was access. When I’m fasting, I can’t eat it. Not because I have more willpower during a fast: there’s no window to eat it in. Structure beats willpower. Every single time, in my data.

The second thing I’d do differently: be more honest earlier about which indulgences actually satisfy me. Some are worth it. Some are just the slot machine. They feel similar in the moment. The aftermath tells a different story.

If you’re tracking your food and you notice a pattern where one off-plan day seems to bleed into three or four days of elevated food noise, that’s not lack of discipline. That’s the reward pathway reactivating. It settles. In my case, consistently around day five to six. Sleep quality returns first, then mental clarity, then the noise quiets.

If you’ve got blood data: check your GKI or glucose the morning after a sugar event. In my case, GKI jumps to 40-something and ketones drop close to zero. I can usually feel it before I’ve looked at the numbers. Once you’ve seen that pattern a few times, it stops being about blame and starts being about understanding the inputs.

And one more thing worth naming. The mechanism I’ve described above doesn’t wait for a diagnosis before it starts operating. One biscuit leading to three, one piece of chocolate starting a day of food thoughts that doesn’t quite match actual hunger: that’s the reward pathway doing exactly what it was engineered to do, years before a biomarker flags as abnormal. The pattern tends to show up in behaviour before it shows up in bloods. Worth paying attention to now, not later.

I spent twenty years blaming myself for a system that was designed to do exactly what it did to me. That wasn’t weakness. That was the wrong map.

One chocolate bar after a week without. And within thirty seconds my brain was hunting for the next one.

That’s not weakness. I’ve now got enough data to know it’s not even close to weakness. But for twenty years, that’s exactly what I thought it was.

I’m Neil. I’m 52. Off all medications since February 2024, after NHS blood tests going back to 2012 that tracked the whole thing. In the next twelve minutes I’m going to show you the pattern in the data that changed how I think about food — and why it matters whether you’re on medication or just starting to notice something’s off.

First, what actually happens in the brain when certain foods get involved — not the chemistry lecture version, the version I lived through. | Then the data from when I tracked what happened after my body had been clean for a while, and one binge undid something that took weeks to build. | And then Boxing Day 2023 — the moment I stopped calling it willpower and started calling it what it actually was. We’re starting there.


THE PUZZLE

One chocolate bar. That’s all it takes. And I’m not talking about one bad day. I’m talking about three to four days of my brain actively hunting. Food thoughts. Cravings out of nowhere. Standing in the kitchen looking for the next thing before I’ve even registered I’m doing it.

Every single time.

And then by day seven, I’ve usually done it again. And then I’m back in the cycle. And this has been my life, tracked in a spreadsheet, for two years. Not every day. But every week, nearly. And I’ve watched it happen enough times now to know it’s not weakness. I’ve lost four and a half stone. I’ve reversed pre-diabetes without medication. I am not a person with no willpower.

So what the hell is going on?


THE DATA

Let me give you the numbers.

December 2023. HbA1c at 46. Cholesterol 8.0. Liver enzyme — ALT — at 69. That’s elevated. Weight, 18 stone on the nose. That’s WMTWL-3215. Boxing Day. The start point.

Fourteen months later, November 2025. HbA1c 37. Liver enzymes fully normal, ALT at 10. Kidney function excellent — eGFR above 90. Cholesterol trending down. WMTWL evidence log, tracked across every GP visit. That’s the trajectory when the inputs are right.

Then there are the other numbers.

Within thirty seconds — not exaggerating — I was in the kitchen looking for more. Not hungry. I’d already eaten. But my brain had switched on something. It wasn’t a choice, or it didn’t feel like one. I was actively hunting. Crackers. Cheese. Anything with a bit of salt or sweetness. By the end of the day I’d had the chocolate, a YOP, crisps, and more crackers — over 1,600 calories from things I hadn’t planned. And I’d noticed every single moment of it happening.

That’s new. Two years ago, that would’ve just been a Tuesday.

Now I track it. And the pattern from tracking it is this: one UPF event, and I get three to four days of this hunting behaviour. Day two the cravings are still loud. Day three they start to quiet. Day five, I sometimes think I’ve reset. And then — and I’ve watched this happen enough times now to be genuinely annoyed by it — by day seven I’ve walked into some social situation and done it again.

I’ve had a meringue with double cream at a friend’s dinner. I love a meringue. And here’s a thing I’ve actually noticed: meringue with fruit and cream — I enjoy that. Properly enjoy it. And the penalty the next day is a fraction of what I get from, say, a chocolate muffin or a lemon muffin with raspberry jam. Interesting, isn’t it. The fat in the cream seems to buffer something. The chocolate muffin? Same calories roughly. Completely different aftermath.

January to March 2026. GKI sitting at 43 the morning after meringues and double cream. Ketones at 0.1. Glucose at 77. Weight that month went from 13 stone 3 in December back up to 13 stone 12 by the end of December. Low point on January 31st: 13 stone 6. Then the pattern runs again.

That’s not noise. That’s a pattern.

And here’s what I’ve worked out — finally — about why it happens.

I’m not going to pretend I’ve solved this. I haven’t. I’m still doing it most weeks. But I’ve stopped blaming myself for the mechanism. I blame myself for walking past the cake shop. I do not blame myself for what happens in my brain in the thirty seconds after.

That distinction has taken me twenty years to make.


THE LESSON

What I’d do differently:

I’d have understood earlier that the goal wasn’t moderation. It was access. If I’m fasting, I can’t eat it. Not because I’ve got more willpower during a fast — because there’s no window to eat it in. Structure beats willpower. Every single time, in my data.

That’s the system doing what it was engineered to do, operating in you, years before it becomes a clinical problem. The pattern tends to show up in behaviour long before it shows up in bloods.
