One evening. Normal food. The kind I used to eat every weekend for most of my adult life. And the morning after, I woke up with inflamed fingers, a bloated gut, and a brain that had been running a quiet food commentary since 6am. I hadn’t had that noise in weeks.
I’ve been tracking blood markers, sleep, energy, and mood daily for over two years. Everything documented. What that tracking revealed is that the gap between “food is fine” and what that food actually does to your system in the hours and days that follow is considerably wider than most of us are told.

The Belief That Makes Complete Sense (Until You Actually Track It)
Here’s the thing about the “one cheat day, clean slate” idea. It’s not irrational. On the surface, it’s the reasonable, sustainable view of eating. One indulgent evening doesn’t derail anything. You wake up the next morning, get back on track, and move on.
That idea is everywhere. It’s in every magazine piece about balance. It’s the implicit reassurance behind most mainstream nutrition advice. And for most of my adult life, I believed it completely.
Part of why I believed it is that I couldn’t tell the difference. My baseline was so disrupted for so long that one bad evening looked exactly like the day before it. Everything felt roughly the same. There was no contrast to measure against.
By December 2025, after 68 days of consistent clean eating, I had contrast. And it changed what that single evening looked like entirely.
What I Actually Ate on Day 69
I want to be specific here, because the numbers matter.
Day 69 of the 70-Day Rhythm Reset. 20 December 2025. Family day. Grandson visiting. We called it Fake Christmas. I made a deliberate decision: this is a cheat day.
Half a bag of crisps. A Milka bar, roughly 90 grams. A couple of chocolate digestives. A chicken and mushroom dish. Two individual trifles. A full roast dinner in the evening.
Total for the day: somewhere north of 3,700 calories. Around 410 grams of carbs. Roughly 100 grams of sugar. All eaten across one day, finished well before midnight.
I want to be clear about what that was and what it wasn’t. This wasn’t a binge in any clinical sense. It was a family celebration. Christmas food. The kind most people eat on several occasions every year without a second thought.
What I noticed during the day itself: by the evening, I was getting hunger signals I hadn’t experienced in weeks. My notes from that evening read: “they call to you, they make your satiety less front of house.” The signals I’d spent ten weeks rebuilding had gone noticeably quiet. I wasn’t full in the way I’d come to expect. I wanted more, even though I’d eaten plenty.
Why the Food Felt Like That (The Mechanism)

The guidelines didn’t account for this mechanism when the advice about “balance” was written. It’s not that the guidance was dishonest. It just predates the research on how these products actually interact with your body’s feedback systems.
What the 72 Hours Actually Looked Like
Here’s the timeline. What I actually observed and noted, not what I expected.
Day 70: Woke with inflamed fingers. Both hands. Visible swelling. Bloated. And from the moment I was awake, my brain was looking for food in a way it hadn’t been for weeks. Not gentle hunger. Active searching. I wrote in my notes: “I am having some form of sugar withdrawal, interestingly.” That’s a strange thing to write the morning after a single evening of what most people would call normal food.
Day 71: Woke feeling considerably clearer. My own note: “some good food had settled me.” Meaningful improvement. One night of eating properly had started to pull things back.
Day 72: Woke early. Work on my mind. Couldn’t get back to sleep. Needed an early night.
That’s the three days. Not a health crisis. Not dramatic. But the disruption lasted three full days, not one.
I want to give that some context. Two months earlier, in October 2025, a sugar indulgence had sent my GKI, the glucose-ketone index that tells me how my metabolism is running, from 6.7 to 13.2 overnight. Three days to stabilise. I want to be straightforward about what I’m not saying.
This isn’t an argument against Fake Christmas. Or birthday dinners. Or Saturday evenings with the family. The conventional view that occasional flexibility is part of sustainable eating is correct. One indulgent evening is not going to undo months of progress. If you haven’t had eight or ten weeks of clean eating to create a reference point, you may not notice the disruption at all. That’s not a failure. You just don’t have the contrast yet.
What the data suggests, and I want to be careful here because this is one person’s experience across a handful of documented events, is that the recovery window from a UPF-heavy meal isn’t necessarily 24 hours. In my case it tracked consistently at around two to three days. Not one. Three.
The “wake up fresh the next morning” framing doesn’t match what I actually observed.
Here’s the part worth sitting with. The mechanism I described, the way ultra-processed food bypasses your satiety signals, the bliss point engineering, the disruption to the feedback system your body relies on, that mechanism operates in everyone who eats these products. Not just in people who’ve had a diagnosis. Not just in people managing a condition. The reason I could see it clearly on Day 70 wasn’t because I was unwell. It was because I’d stopped being disrupted all the time and could finally read the signal.
